Could someone explain please what are these parameters for as they seem to affect my solution running or aborting.
My assumption is that they are similar to Ansys-"Operating Pressure" for pressure but I don't know about the velocity.
Or are they the same as "Reference Values" in Ansys?

I am not familiar with the ANSYS tools, except for some snippets of documentation.
In any case, the reference pressure is the one you provide for basically all flows (as with the incompressibility hypothesis, the pressure field is solved relative to a reference, which can in theory be arbitrary). It is usually best to use an actual "physical" reference, so that the interpretation of the pressure field does not require an additional shift by a constant.
Be careful: if you use a variable density, buoyancy terms will be computed based on (p -p_ref), so values need to be consitant.
The relative velocity is used for turbulence initialization
